The citrus fruit harvest starts in November when the fruit reaches optimum ripeness in order to preserve the quality and length of the storage period.

Reception and
storage
During the reception phase, the fruit is checked and cooled in cold rooms or
by forced air to maintain freshness.
Packing
Once the packaging and pallet tying phase has been completed, the product must be stored in a cold room, pending loading onto the transport vehicle. The product must remain in the cold store for as short a time as possible in order to guarantee its freshness at all times.
The ideal temperature for storing and transporting the product should be around 0°C, particularly when shipping long distances (15 to 20 days), while it can vary between 2 to 4°C for shorter distances.
