Artichokes are harvested from November to April.
\nAs with peaches, harvesting is scalar, i.e. done in several stages as the plant produces several times during the winter months.

One of the final stages is packaging. The artichokes are placed in the packaging requested by the customer. After tying the pallets, they are stored in cold storage waiting to be delivered to the end customer.
